TBC 8 years later …..
TBC was my first employer in Shanghai, the excuse i had to come back in China. I have been working there for little less than 1 year and I remember it as one of the best working environment ever, mostly due to the laid back boss. More than 8 years after my departure I was invited to have an holiday lunch with the old team. Happy to see again some of old friends :-)

Citronette
- 1 cucchiaio di succo di limone
- 4 cucchiai di olio extravergine di oliva
- sale
- pepe
PROCEDIMENTO
In una ciotola unite il succo di limone, il sale e il pepe e mescolate accuratamente per sciogliere gli ingredienti.
Continuando a sbattere costantemente e in modo delicato, incorporate l’olio fino a ottenere un’emulsione: in questo modo la salsa diventerà più densa e omogenea.
TRUCCHI E CONSIGLI
Prestate attenzione affinché il sale si sciolga totalmente nel limone; in caso contrario, una volta versato l’olio rimarrà granuloso. Se le proporzioni di olio e limone non sono perfettamente bilanciate, la salsa non si addensa e tende a non omogeneizzarsi; in questo caso, provate ad aggiungere qualche goccia di uno dei due liquidi.
Dal momento che questa salsa non è un’emulsione stabile – poiché manca un emulsionante, come il tuorlo nella maionese – dopo poco tempo potrete notare la separazione dei due liquidi, olio e limone: con una semplice sbattitura sarete in grado di riformare l’emulsione.

Crema Pasticcera (cookaround)
- 250 ml latte
- 2 tuorli
- 2 cucchiao di zucchero
- 20 gr maizena
- vaniglai o scorza limone
Besciamella di mamma
Latte in un pentolino a bollire con un cucchiao di burro, un pizzico di sale e noce moscata.
A parte si mescola il restante latte con la farina setacciata, circa 40 gr, un cucchiao e mezzo, si mischia bene.
Quando il latte bolle si aggiunge il mix (farina e latte)
Latte: circa 500 ml

Mexico’s Zapatista rebel leader Subcomandante Insurgente Marcos steps down.
As many other young men in the 90s, I was fascinated by the story of indigenous uprising in southern Mexico Chiapas. On 1 January 1994, when the U.S.–Mexico–Canada free trade agreement became effective, Subcomandante Marcos led an army of Mayan farmers into eastern Chiapas state, to protest what he saw as the Mexican federal government’s mistreatment of the nation’s indigenous peoples.
While his identity is still unclear, mystery, passion, dream made him soon a post-modern Che Guevara, an hero for many.
In August 2008 I’ve spend few weeks in Chiapas. After they checked on me, I was secretly trained for few nights in San Cristobal de las Casas by people from the hidden Zapatista Army of National Liberation and finally allowed as International Observer in the occupied Indigenous Community “Francisco Gomez” - back then was one of the 5 villages occupied by the indigenous and monitored by the federal army eager to come in and take them back.

Florentine T-bone Steak (Bistecca alla Fiorentina)
A favorite of Tuscan cuisine, Bistecca alla Fiorentina consists of a thickly cut and very large T-bone steak grilled over a wood or charcoal fire traditionally served very rare.
As early recipe dictates Bistecca alla Fiorentina must be: 1-1.5 kg; 5-6 cm thick; 3-5 min grilling per side (flipping it only once) and 5-7 min vertically standing on its bone so as to make the blood drain out.
Few months ago, when i heard In Shanghai some Chinese friends went to a small village near Florence to enjoy the famous Florentine Steak, I told myself it is a time I must go and see it with my own eyes. What’s the best font size for the web?

We can be reasonably confident that even a low–x-height typeface like Times New Roman will be readable on most devices if you set it to least 14 points tall, but 18pt is a better choice if your design accommodates it. If you use a more readable face such as Arial, 12pt is a good minimum, with 15pt being pretty much ideal.
The good news is that our old rule of thumb—start at 16pt—is still a pretty good one, at least for users on laptops, desktops and phones. But if you are designing for a conference room PC, no text should ever be smaller than 26pt Arial, and most text should be at least 33pt.
